This tea brewing guide explains six methods or techniques for pouring tea water with a gaiwan. Key element is the balance between technical skill and awareness of body and mind. The brewing methods are suitable for oolongs, aged teas, ball-, strip- and bud-shaped teas, white and green teas, rock tea and puerh.

Years ago I visited Tea Master Zhang in Taipei, to explore the essence of traditional Tieguanyin tea. Until then the only time I drank tea in Maokong was during my freshman year. Back then I had little interest in tea, let alone loose leaf tea. It was only years later that I learned how famous Muzha’s Tieguanyin is.
