Moving through Bai Ge’s natural tea garden resembles a walk in a tropical forest. The philosophy he lives by is to let nature do its thing - which he also applies to his tea trees. He rarely clears the land of weeds and even utilizes the biomass as “the best fertilizer you can get”. The space in between the thick and tall tea trees is inhabited by other plant species, mosses and ferns, forming a dense root-network deep in the soil. This provides abundant access to nutrition which is the premise for rich tasting premium tea. Bai Ge emphasizes the importance of letting the land rest, so he limits his yield to one to two harvests per year. Compare this to conventionally farmed tea which is usually harvested four to six times.
This white loose leaf tea is made of the Da Man cultivar, nowadays a rare find grown in Pinglin, Taiwan. The cultivar’s signature is its subtlety and simplicity. The minimal processing makes for a very fine aroma with a quality of pear. A slow and steady release of its contents lets you enjoy up to seven steeps.
